Ingredients:

  • 1 cup of raw almonds – unroasted.
  • 1 cup of raw sunflower seeds – unroasted.
  • 1/3 cup of chopped celery.
  • 1/3 cup pickled gherkins, chopped
  • ¼ cup red onion, chopped.
  • 1 tbsp. freshly squeezed lemon juice.
  • 2 tbsp. pickled pickle juice.
  • 1 tbsp. vegan mayonnaise.
  • 1/2 tablespoon of Dijon mustard.

You can serve and present this vegan tuna salad in multiple ways, the options here are very diverse, depending on the time of the meal, and what our diet or food restriction is.

  • Your favorite bread, toasted.
  • Sliced ​​cucumbers.
  • Hemp seeds.
  • Avocado slices.
  • Tomato slices.

Preparation:

  1. In a bowl, combine the almonds with the sunflower seeds, then you must cover it with hot soaked water while you continue with the rest of the recipe.
  2. In another bowl, combine the celery, pickles, red onion, lemon juice, pickle juice, mayonnaise, and mustard. Remember to season them with a little salt and pepper and then reserve them.
  3. In a food processor or blender, finely grind as much of the almonds and seeds as possible. If they get stuck, you can add a little pickle juice or water and scrape down the sides until you get a nice texture.
  4. Add this mixture with the remaining ingredients and mix everything well to combine them. Season to taste with salt and black pepper, adding a little more lemon juice or pickle juice if you want more flavor.
  5. Serve with toasted bread with lettuce, tomato and avocado, and any topping you like, or on a salad, on half an avocado, or with your favorite cookies or crudités for dipping.
